Non’s Healthy Meat Recipes

Our guest writer, Non Evans MBE, regularly shares with us some of her healthy and nutritious meat recipes.  And we’re delighted to share three of these recipes with you in our latest blog: Non’s Healthy Meat Recipes.

Beef Hot Pot

HealthyWe’re starting with her beef hot pot recipe, perfect for a cold winter’s evening and which takes only 15 minutes to prepare.  Non uses our lean, diced beef and then chops up any vegetables including cabbage, leeks, onions, garlic, peppers, sweet potatoes, carrots, celery and swede.

The whole lot goes into a slow cooker with plenty of herbs and spices, a cup of water and a couple of Oxo cubes (beef or vegetable stock).  Just leave it slow cook for 8 hours and this healthy, nutritious hot pot is ready when you get home from work and will last for a good few meals.

Healthy Spaghetti Carbonara

Non prepares her healthy spaghetti carbonara by removing all the fat from thick lean Hugh Phillips Gower Butchers hand-made bacon which she then dices and places in a non-stick pan with a drop of olive oil, garlic and pumpkin seeds to brown lightly.  Whilst the bacon is cooking, boil your wholemeal spaghetti with just a pinch of salt.  Next beat up three eggs (egg whites only if you are being very health conscious) add salt and pepper and a drop of skimmed milk. (No Parmesan cheese or cream in this healthy recipe!)

Drain the Spaghetti. Add all the ingredients together and stir in so the hot spaghetti can cook the egg. Place some fresh parsley or thyme on top to garnish.

A healthy and delicious meal that also just takes 15 minutes to prepare, perfect after a training session.

HealthySticking with the pasta theme, Non also recommends our extra lean mince when it comes to making a healthy spaghetti Bolognese sauce.  The mince is cooked in a pan with a drop of olive oil, onions, mushrooms, mixed herbs, salt, pepper, pumpkin seeds, sesame seeds and tomatoes and served with wholemeal (brown) spaghetti.  This is a healthy, fat free, high protein dish, provided you avoid the garlic bread and wine!
