Turkey is not only extremely versatile, so doesn’t have to be restricted just to a roast and, importantly, it’s also very low in fat.  What’s more, it can be used in practically anything, from stir fry’s, to turkey curries, salads and meatballs.

As well as been extremely lean, turkey is also a great source of protein, even more so than chicken, and it can be eaten every day of the week. If we’re happy to reserve turkey for our biggest occasions, why don’t we treat ourselves every week of the year.

Tukey is also a great source of iron, zinc, potassium, phosphorus, vitamin B6 and niacin, both of which are both essential for the body’s energy production. Eating turkey regularly can help lower cholesterol levels and as the meat is low-GI, it can help keep insulin levels stable.

Turkey contains the amino acid tryptophan, which produces serotonin and plays an important role in strengthening the immune system. It is also a source of selenium, which is essential for thyroid hormone metabolism; it also boosts immunity and can act as an antioxidant.

If you’ve invested in a huge turkey for your Christmas dinner, it’s a good idea to take off the legs to use for New Year meals.   These can be cooked in a slow-cooker with a sprinkling of salt and pepper and covered in water (to create a tasty turkey stock which can be frozen for future use).  Cook on high for around five hours for a delicious, dark meat that can be enjoyed in any number of family recipes.  The end result is a wonderfully moist and tasty cut of meat.

We know that many people prefer turkey breast, but the darker meat has much more flavour and is brilliant to sue in risottos, soup, pies and curries.
